The January 2010 Daring Bakers’ challenge was hosted by Lauren of Celiac Teen. Lauren chose Gluten-Free Graham Wafers and Nanaimo Bars as the challenge for the month. The sources she based her recipe on are 101 Cookbooks and www.nanaimo.ca. It’s a sugar filled blast from my past. I’m going to hazard a guess that I am one of the few DB’s who has sampled this tasty treat in its hometown.
Part of the challenge was to make our own graham wafers. They smell delicious, even when they’re still in the dough phase, and their tasty buttery goodness when baked is the perfect companion to a glass of milk. I didn’t worry too much about making them look beautiful, as they were to become crumbs. This was actually my favourite part of the challenge. I will definitely make these again just as a cookie to eat on their own.
Nanaimo bars make me think of summer and sailing and ferries, and also of winter church potlucks. It was fun to make them, and thankfully, there are teenagers and other hungry people around to ensure that I will probably only end up eating one or two.
I actually made the wheat flour version because I didn’t have time to get the other flours, but it is nice to have a gluten free recipe up my sleeve for when I cook for celiac friends.



I’m jealous you got to eat Nanaimo bars in Nanaimo – that must go on my bucket list! Great job on the graham crackers and nanaimo bars – yours look lovely!
